Preparations

It’s almost here- D Day-or “diet day” rather.

And it’s taking mad prep to get ready. I’m coming back to a super empty fridge and pantry since I played “Oregon Trail” for about a week and a half before the Christmas holidays. What’s Oregon Trail you ask? No, it’s not the game you played in 3rd grade computer. It’s where you eat whatever you have, often resulting in some pretty weird ass concoctions toward the end of the game. But you don’t have to ford the river or get stuck with malaria or anything like that and it does save $.

I was able to switch to an earlier flight back to DC (side note: Jet Blue has just about the easiest flight switch ever—same day, only $40 to switch!!!) so I’ll be able to grocery shop tonight. The goal tonight is to get everything into the apartment so I can cook a bunch tomorrow. I randomly sifted through recipes on my Pinterest and in the SBD book and luckily a lot of ingredients overlap, so here’s hoping that the bill isn’t INSANE.

Here’s the grocery list. It’s going to be an epic trip. Can you tell I’m Type A with making lists and such??

Snacks
Pistachios
Low fat cheese sticks
Laughing Cow Cheese
Celery

Breakfast
Eggs
Egg Beaters
Reduced Fat Shredded Cheese (Mozz, since that’s what the pizza bites ask for)
1 box frozen spinach
Canadian Bacon
V-8 Juice (eww, but we’ll see how it goes)

LunchBig pot of Lentil Soup
Dried Lentils
5 cups Chicken Broth (enough for mashed taters, too)
1 can stewed tomatoes
bag of onions (1 for this, others other meals)

Dinners
Dinner 1: Mashed Potatoes, Chicken Saute, Curried Peas sans Peanuts
2 heads cauliflower
Fat Free Half and Half
Stick of Margarine
Frozen Chicken (check supply in freezer first)

Dinner 2: Portabella Pizza Bites
4 large Portabella Caps
1 tomato
Turkey Pepperoni
Black olives

Dinner 3: Oriental Cabbage Salad and Marinated Flank Steak
1/2 small head cabbage
3 scallions
Dark Sesame Oil (check, do I have this?)
2 tbs sesame seeds
1/2 cup tomato juice
1 1/2 lbs Flank Steak
lemon

Desserts!
Sugar free Jello cups for work
Reduced fat Ricotta Cheese

WHEW! I am exhausted just thinking about this “haul” of groceries that’s about to happen. But, I’m really excited to know exactly what I’ll be having for the rest of the week. If I can make some breakfast muffins and the lentil soup (recipes for everything I’m making to come!!) tonight that’d be awesome. If not, guess I’ll just ride the fat train extra hard tomorrow before D Day.
