Countdown!

Groceries = success. The BF and I raced around both Trader Joe’s and Giant to get all of the things on my list. Turns out that a holiday Monday coupled with New Year’s Resolutions will leave the produce section quite bare. 

As part of my prep work, I was able to make Lentil Soup AND some quiche cups! These are both really really easy and will make life easier in the morning, I promise. 

Vegetable Quiche Cups (Adapted from the South Beach Diet book)

3/4 cup egg beaters
3/4 cup reduced fat cheese
1 10 oz. package frozen spinach
7 slices Canadian Bacon

To prepare:

1. Cook spinach in microwave. Drain water from spinach and mix in the egg beaters and cheese. 

2. Cook Canadian Bacon (I wasn’t sure if this step was necessary? seeing as canadian bacon is already cooked, but sure, why not?)

3. Chop up Canadian Bacon and mix into bowl.

4. Pour mixture into greased muffin tin. Bake at 350 for 15-20 minutes, or until fork comes out clean.

SEE? How easy was that? And now you’ve got a wonderful low carb breakfast that’s sure to keep you satisfied until lunch.

Over break my mom made lentil soup and commented on just how cheap it was to make. I like cheap, especially after expensive Christmas and New Year’s extravaganzas. Total cost for this soup = just about $5.00. For 8 meals, that’s CHEAP y’all.

I found this recipe while browsing Pinterest and made a few modifications. Super easy as well-just dump it all in and let it simmer!

Lentil Soup (Adapted from Cheap, Healthy Good)

1 onion, diced
2 TBS olive oil
2 celery stalks, diced
2 14.5 oz cans stewed tomatoes, diced 
2 cups dried lentils
4 cups chicken broth
1 teaspoon garlic powder
1 teaspoon oregano
1 bay leaf
1 teaspoon basil 

To assemble:

1. Heat oil in a large pot. Cook onion and celery until tender. 
2. Dump in all remaining ingredients. Stir. Bring to a boil, then reduce to a simmer.
3. Simmer for 40-60 minutes, or until lentils are soft. 

If you haven’t figured it out, I’m not a gourmet cook. And you don’t need to be to make sure you’re eating well, especially on the SBD.
