Day 1 is almost over! I won’t say that I haven’t had any cravings for carbs today, but today was a TON smoother than I expected.
For starters, on my way to an early morning Bar Method class this morning I forgot my coffee (decaf). We were out of cups at work, too, so I didn’t get any coffee at all until about 4 o’clock! I thought I’d have a super headache because of lack of caffeine but I was totally fine.
Here’s what I ate today:
Breakfast
6 oz spicy tomato juice
4 mini Vegetable Quiche Cups
Snack
1 low fat cheddar string cheese
Lunch
1 cup Lentil Soup
Sugar Free Jello
Snack
30 pistachios
Dinner
Curried peas
Mashed potatoes (aka cauliflower)
Savory Chicken Saute
Dessert
Ricotta cheese with splenda and vanilla extract
Nighttime is the biggest time for snacking and unneccesary eating for me—I typically eat while I’m cooking dinner, so that by the time I finish cooking dinner I’m already pretty full. I was starving by the time dinner was finished but I’m hoping that a few weeks of no snacking before dinner will help nix that bad habit!
I had a little kitchen meltdown tonight. Actually a pretty big one. I was severely upset that my KitchenAid mixer wasn’t turning the cauliflower into mashed potato consistency. And neither did my mini food processor. You really should use a blender if you’re attempting. Or else your mashed potatoes will have more of a rice-like consistency.
Only 13 more days in Phase 1!
