Day 3- PIZZA!

I’ve always been pretty ok with eating well during the week—I’m a packer (meaning I pack my lunch instead of paying $8-$10 a day to eat something that’s unhealthy and overpriced in downtown DC) so there’s always been a lot of control regarding my breakfast and lunch. Dinner would generally be ok, but the weekend is where I always fell apart.

Maybe it’s growing up that weekends signaled “all you can eat buffet: now open” or what, but whenever Fridays strike my mind heads straight to the cheese-its, pizza and whatever other unhealthy snack I can get my hands on. Growing up we weren’t allowed junk or soda during the week, so in a way I think that mentality has stuck around now?

Anywho, the thought of having my first couple of days on the South Beach Diet fall on a weekend terrified me, so I started looking around for a recipe that would appease my normal Friday cravings. And y’all, seriously, these pizza bites were legit. So good that I will make them when I’m off of this diet thing.

Another Pinterest recipe, another win. I copied this recipe to a T and it turned out GREAT!

Portabella Pizza Bites (From MyP90xNutritionPlan.com)

4 large portabella mushroom caps
1/2 cup marinara sauce (I used spaghetti sauce I had in the pantry)
1/2 cup low fat cheese of choice
Turkey pepperoni
Olives

To assemble:
1. Scoop out portabella caps to get rid of all of the gills and the stem
2. Bake caps at 400 degrees for 7 minutes
3. Layer sauce, cheese and toppings on top of caps
4. Broil for 3 minutes, or until cheese is melted

I can’t stress HOW GOOD these were—even the BF, who was skeptical at first, really liked him. Funny how he swears he’s not doing this diet but he goes along with whatever I’m eating 95% of the time? I think he’s in denial.

It was a great way to end the week, and day 3!

1 wedge Laughing Cow Cheese

Sugar free jello

4 mini vegetable quiche cups

2 portabella pizza bites
Roasted chickpeas
