Cheating?

I confess. I had a full caffeine skim latte today. Terrible? Probably not. But I did feel a pretty big twang of guilt as I ordered. As far as the latte goes, it’s just milk and coffee. Milk is allowed during phase one as long as it’s skim or 1%…but caffeine isn’t.

I just wanted to stay awake tonight when the BF and I hang out with friends!

It could be worse I guess. I did make a SBD friendly snack that is awesome-definitely satisfied my need for a crunch in my life!

If you haven’t tried roasted chickpeas, you totally should-super easy to make and so much better for you than other crunchy snacks like chips or crackers.

These were adapted from Skinnytaste, a GREAT blog for awesome recipes. I’ve made a lot of Gina’s recipes and all of them have turned out really well!

Roasted Chickpeas

15 oz can of chickpeas, drained
1 tsp chili powder
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
1 tsp curry powder
2 TBS olive oil

To assemble:
1. Drain chickpeas and dry thoroughly.
2. Roast chickpeas for 35-40 minutes in a preheated 375 degree oven until they’re crunchy on the inside.
3. Combine all of the spices in a bowl. When chickpeas are done, put them and the spices in a gallon size zip-lock bag and shake to coat the chickpeas.

These are best enjoyed right out of the oven, but will keep a day or two—they just won’t be as crispy.

Ok, no more cheating! I’m heading out tonight and it’ll be the first time that I can remember that I don’t enjoy an adult beverage or two.
