Crackers deserve their own post

I’m wordy. And that other post was already real long, so I decided to reserve the really awesome recipe for a post all it’s own- CRACKERS!

You read right— crackers on the SB diet. I was headed to a Patriots game watch and didn’t want to show up without anything I could eat, but I wanted it to be football appropriate. Enter this AWESOME cracker—seriously they taste pretty much like the flatbread crackers in the grocery store. Except they’re healthy-ish. Def not something you want to eat hand over fist like I started to do last night, but a great snack option!

The secret ingredient is chickpeas! I was giggling last night that I was dipping chickpeas into more chickpeas with my hummus, but hey I guess I got a lot of good fiber last night!

Chickpea Crackers (from Gluten Free Goodness)

1 can chickpeas, drained and blotted well
1/2 teaspoon baking powder
3 Tablespoons ground flax seed
2 teaspoons garlic
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
1 TBS olive oil

To assemble:

Preheat oven to 325.

1. Puree chickpeas in a food processor until smooth.
2. Transfer chickpeas to bowl and add rest of dry ingredients, blending well. Add in oil—at this point the dough will start to come together like a traditional bread dough—if it’s not, add a little bit more oil
3. Transfer to wax paper and roll the dough as thin as you can (the thinner crackers were better than some of my thicker crackers).
4. Cut the crackers into whatever shape you’d like. I didn’t have a pizza cutter on hand, so I did what I could with a regular knife.
5. Place on foil-lined baking sheet. You can really cram these together because they don’t really rise.
6. Bake for about 40 minutes, or until the crackers start browning on top. Be sure to turn the pan about every 10 minutes!

These held up just as well as any other cracker with hummus last night and were super tasty-I let everyone else taste the crackers and they were surprised that they were made with chickpeas. I’m planning on attempting more of a plain wheat thin cracker as well as a cheesy one, too!

Off to attempt another carb like recipe- BREAD!
