You can’t even taste the Fiber One. No, seriously—I’m not pulling your leg or trying to pretend like you can’t taste it. You really can’t.
These are GOOD. They also have a good serving of fiber and veggies so it’s a pretty healthy dinner. I chose to have mine sans pasta but the BF made traditional spaghetti and meatballs with his. Either way, a healthy and easy dinner to put together. We had with a side of brussel sprouts to round things out!

To Make:
Meatballs:
3/4 cup Fiber One (crunch it all up in plastic bag so they resemble breadcrumbs)
1 lb extra lean ground beef
1/4 cup parmesan cheese
3/4 teaspoon Italian seasoning
1/4 teaspoon garlic
1 8 oz can tomato sauce
Sauce:
1 28 oz can crushed tomatoes
3 teaspoons garlic
1 onion, roughly diced
To assemble:
Mix all ingredients for meatballs together in a bowl until well blended. Form into 16 1 1/2 inch meatballs and place in large frying pan. Brown, turning every couple of minutes (I had an issue with some pinkness so make sure you keep turning!!)
After meatballs are browned through, pour in sauce ingredients and simmer for about 20 minutes.
You’re looking at about 250 calories for just a large serving of meatballs and these are really filling!!
