Week Ahead

It’s that time again! Time to plan menus, workouts and grocery lists!

My second job fell through so it looks like I’ll continue to have NO excuse for squeezing in 6-8 workouts a week (that’s both a blessing and a curse I guess!) With Hawaii just over 2 1/2 months away it’s hard to conceptualize being in a bathing suit, but I know if I don’t kick my butt now I will be so very sad in 2 months and wishing I had done something about my love handles.

So here’s the workout plan:

Monday- 4.5 miles AM (likely will be 15 x 400 with 60 seconds rest), Bar Method PM
Tuesday- Bar Method PM
Wednesday- 4.5 miles AM (workout TBD)
Thursday- Bar Method PM
Friday- Bar Method PM (Date night so BF is coming with!!)
Saturday- 7 miles

And the menu to go along:

Monday- Leftover Greek Chicken and Acorn Squash (we never got around to cooking it last week!)
Tuesday- Steak, Sweet Potato Fries, Curried Peas
Wednesday- Company Awards!
Thursday- Roasted Tofu and Broccoli Stir-Fry
Friday-Sunday- ??? 

I don’t have time this Sunday with the BF’s family in town and the Super Bowl to make my usual vat of something for lunches this week, so I’m trying out this recipe for Avocado Spinach Egg Salad. I imagine we’ll also have leftovers from some chili that’s bubbling on the stove, too that I’ll be able to munch on.
