Good GAWD I’m tired. Bar Method yesterday and today, plus 5 sweaty miles on the treadmill tonight has left me zapped of all energy.
Thank goodness dinner was already made tonight! The BF has class Tuesday/Wednesday/Thursday right now so we make Mondays a priority to spend time together and make dinner. I wanted to make a really awesome recipe that I saw on Pinterest but I couldn’t find “chipotle chiles in Adobo sauce” at the grocery store this week. Anyone know what the hell that looks like?
Anywho, after about 10 minutes of staring at the Mexican section and hoping these chiles would present themselves, the BF grabbed a packet of Taste of Thai’s Peanut Sauce Mix, a can of coconut milk and a hopeful look in his eye. And so this recipe was born—until I saw pretty much the same thing on the back of the package. Womp, womp. I’m still claiming it.
Spaghetti Squash Peanut Sauce Chicken (yeah, it’s a mouthful)
1 1/2 lbs chicken breasts, cut into bite sized pieces
1/2 onion
1 small green pepper
1 can light coconut milk
1 Taste of Thai Peanut Sauce Mix
1 medium spaghetti squash
To make:
1. Preheat oven to 375 degrees. Cut spaghetti squash in half lengthwise and scoop out the seeds. Place face down on cookie sheet (I covered mine in tin foil for easy clean up) and bake for 30-40 minutes, or until soft. When done, take a fork and shred insides into a large bowl.
2. In a large frying pan, mix coconut milk and chicken. Simmer until chicken is almost cooked through.
3. Add sauce mix to the frying pan and bring to a boil.
4. While sauce is thickening, saute pepper and onion until soft.
5. Add veggies to the chicken mix and continue to heat until sauce is thickened.
6. Serve!
I wasn’t sure how the spaghetti squash would hold up mixed with the sauce for leftovers so I kept the two separate. The meal itself was delicious- spaghetti squash always surprises me that it really can serve as a near perfect substitute for spaghetti! This recipe also gives a great source of veggies and protein. I’m not sure that the sauce mix is exactly South Beach kosher, but each 1/4 of the package only had 8 carbs so I’m guessing it was better than most mixes?
